Saponification Value (mg KOH/g) = (V × C × 56.1 × 1000) / m

  • V = Volume of KOH used (in L)
  • C = Concentration of KOH (mol/L)
  • 56.1 = Molar mass of KOH (g/mol)
  • m = Mass of fat sample (g)

Example

If 15 mL of 0.5 mol/L KOH is used to saponify 2.5 g of fat:

Saponification Value = (0.015 × 0.5 × 56.1 × 1000) / 2.5 = 168.3 mg KOH/g
